Homemade Microwave Popcorn
Popcorn is great snack. We’ve been told this by nutritionists, Pop Secret, Runner’s World etc. for year, but the truth is that despite how low cal or healthy it may be, its straight up delicious. The problem is that popcorn doesn’t travel well or hold well over time. So bringing leftover popcorn to office was just a stale, chewy let down.

Maple Oat Cereal
Due to both soy and almond allergies there is virtually no granola out there that I can buy, so I have to make my own. This time around I was going for more of a cereal to mix with yogurt than a clumpy granola. I also wanted to mix in some more whole grains and seeds for an extra nutrition punch.

Kate and Swiss chard are extremely healthy. They have calcium, Vitamin A & C, and potassium, to name a few. Spinach and Beef Ragu
This recipe originates from the “what do I have in the house” mentality and while it thought it might turn out a bit odd, it actually came together really well. It’s actually a stovetop twist on Victory Casserole and is served as a ragu over pasta. I also found that you can really shave off some time by grating the cheese AND the onion with a CuisinArt fitted with the grating plate.

Spicy Sausage
Sausage only gets tricky if you want sausage links (which I plan to revisit at some point), otherwise it’s a snap and great use for odd amounts of left over ground meat. I only used a half pound in my Apple and Pork Stuffed Acorn Squash, so I had a half pound left over and decided to season it and use it as a pizza topping. It was more than successful.

This is a great winter fruit and vegetable dish. I had only ever cooked acorn squash with large amounts of brown sugar or maple syrup before this, but in this recipe the apples and apple cider really negate all the bitterness in the squash. It also turns out that acorn squashes have fairly large middles and made perfect little bowls for the filling.
